Keeping in Touch

A special hello from your "Green Caribbean Island"! We are a little behind with our summer edition of the Jungle Journal due to a very active summer. This success is largely due to past guest referrals so we are grateful to all of you for sharing your Jungle Bay experience with others. Jungle Bay is temporarily closed for the month of September to upgrade for the winter season. Our upgrades include expanding the pool deck, pruning trees and generally getting things in shape...in anticipation of your return, of course. Our staff, which most of you have come to know, is using this time to get their kids back to school, replant their vegetable gardens, harvest their bay trees and travel to other islands to shop and visit relatives. Glenda, your spa director/yoga teacher/wedding planner and my wife, is splitting her time with our daughters Danielle and Jai in St. Croix, US Virgin Islands and later in New York where she plans to brush up on her yoga skills. I, on the other hand, will be spending September working with our construction crew by day and keeping up with this year's historic US presidential election in the evenings. For any Americans, we

We are delighted to report that, thanks to your generous support, the House of Hope for severely disabled children is almost complete! The total contribution from Jungle Bay guests and friends was over one hundred thousand dollars! You were, by far, the largest contributors to this worthwhile project. Glenda, myself, the entire staff of Jungle Bay and the people of Dominica thank you for this generous gift. In a few weeks the beautiful "special kids" will take up residence in their brand new home. We
plan to offer the House of Hope additional supplies and will continue to support them and the many projects that affect the lives of the people of Dominica, especially the villages close to Dominica.

For those of you who may wondering what the next community project with be; we would like to provide a "special holiday gift basket" of medical supplies and other items to the rural health clinics in the southeast of Dominica from the Jungle Bay family. In addition to serving the residents of the area, these centers have been generous in providing assistance to our guests. From time to time, our guests have received medical care for asthma attacks, ear infections, bruises and even prenatal care. We want to ensure that our local medical professionals have adequate supplies to continue to provide excellent medical care to our residents and guests. If you wish to contribute to the "special holiday gift basket", please let us know. We welcome your support.

On an entirely different note, the National Trail Project is well on its way. This is a European Union project to assist Dominica in developing a world class national trail system. One of the recommendations is to develop a trail from the Jungle Bay area to the Boiling Lake. This will provide an alternative access to the famous lake and will help showcase the southeast of Dominica as an emerging ecotourism region.

Several of you, our guests have been so excited with Dominica that you have inquired and in some cases have actually purchased real estate on our lovely island. We are optimistic about this and will continue to facilitate your requests. We are in the process of putting together a listing of available land for sale, so let us know if you're interested in our listing. We do not plan to offer this list to the general public but rather just to our guests and friends.

Also, Lauren Viera from the Chicago Tribune was down at Jungle Bay and her feature article raves "Dominica offers an ecological escape from the everyday". The Telegraph (UK) takes readers on an exciting adventure through "Dominica - the Caribbean's lost world" By Gavin Bell. E! Television News in the US featured Jungle Bay as being among the "Top 4 Eco Vacation Properties".

'Rasta Man Ital' Recipe
A favorite at Jungle Bay's Pavilion Restaurant

'Ital' is a term derived from the word "vital" and is used by Rastafarians to describe their healthy yet delicious diet. In essence, they believe that the body is a temple so should not be fed impure food. The Ital diet is generally vegan food, however some Rastas eat fish. Ingredients must be as natural as possible.

IngredientsJoanne serving up authentic Dominican cuisine

2 lbs peeled chopped pumpkin

1 diced onion

1 diced garlic clove

1/2 diced bell pepper

4 cups spinach leaves

1 1/2 cup vegetable stock

1 cup coconut milk

1Tbs olive oil

Method

In a large pan saute onion, garlic and bell pepper in oil. Add chopped pumpkin and mix well. Add vegetable stock. Bring to a boil until pumpkin is tender, and then add the spinach leaves and coconut milk. Mix well, and add salt to taste. Serve hot over cooked brown rice.


Jungle Rum Punch Recipe

Mix up a some tropical rum drinks with your friends. Here is one of the simple yet delicious favorites from Steven Titre at Jungle Bay's Bar:




Jungle Punch

A mix of fresh fruit juices (pineapple, passionfruit, mango, orange, or available alternative)

1 oz coconut rum

Serve over ice with a pineapple wedge garnish
